Ingredients
  

  • 2 cups cooked sushi rice seasoned with 2 tablespoons rice vinegar, 1 tablespoon sugar, and a pinch of salt
  • 1 cup imitation crab meat shredded
  • ½ cup cream cheese softened
  • ½ cup Japanese mayonnaise plus extra for topping
  • 1 tablespoon sriracha adjust to taste
  • 2 tablespoons soy sauce
  • 1 sheet of nori cut into small strips
  • 1 tablespoon sesame seeds toasted
  • Green onions chopped (for garnish)
  • Seaweed sheets for serving

Instructions
 

  • Prepare the Sushi Rice:
  • Cook 2 cups of sushi rice according to package instructions. While warm, season with rice vinegar, sugar, and salt. Spread evenly in a greased baking dish.
  • Mix the Seafood Filling:
  • In a large bowl, mix shredded imitation crab, cream cheese, Japanese mayonnaise, sriracha, and soy sauce until creamy and well combined.
  • Create the First Layer:
  • Spread the seasoned rice evenly across the bottom of the baking dish. Lightly press down with a spatula.
  • Add the Seafood Layer:
  • Evenly spread the seafood mixture over the rice layer.
  • Add Toppings:
  • Drizzle additional Japanese mayo and sriracha over the top. Sprinkle with toasted sesame seeds, nori strips, and chopped green onions.
  • Bake:
  • Preheat the oven to 375°F (190°C). Bake for 20-25 minutes until the top is bubbly and slightly golden.
  • Serve:
  • Remove from the oven and let cool for a few minutes. Serve with seaweed sheets for scooping and enjoy!
