  • Sponge Cake:
  • 4 large egg yolks
  • 1 cup granulated sugar

  • 1 cup superfine sugar

  • 2 tablespoons cornstarch
  • 2 large egg yolks
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the Oven:
  • Preheat to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
  • Prepare the Cake Batter:
  • In a large bowl, cream together the softened butter and sugar until light and fluffy.
  • Add the egg yolks one at a time, mixing well after each addition.
  • Sift the flour and baking powder. Gradually add it to the butter mixture, alternating with the milk. Mix until smooth.
  • Make the Meringue:
  • In a separate bowl, beat egg whites until soft peaks form. Gradually add sugar and continue beating until stiff, glossy peaks form.
  • Assemble:
  • Pour the cake batter into one of the prepared pans.
  • Spread the meringue on top of the batter, creating gentle peaks. Sprinkle sliced almonds over the meringue.
  • Bake:
  • Bake for 30-35 minutes or until a toothpick inserted into the sponge layer comes out clean. Let the cake cool in the pan.
  • Prepare the Custard:
  • In a saucepan, whisk together milk, sugar, and cornstarch. Cook over medium heat until the mixture thickens.
  • Remove from heat and stir in the egg yolks and vanilla. Let the custard cool.
  • Assemble the Cake:
  • Carefully remove the cake from the pan.
  • Slice the cake horizontally if desired, and layer with the custard filling. Add the meringue-topped cake layer on top.
  • Serve:
  • Slice and serve with whipped cream or fresh berries, if desired. Enjoy this rich and elegant Norwegian classic!

Notes

For a lighter version, you can use low-fat milk for the custard.
