  • 2 cups all-purpose flour
  • ½ cup Dutch cocoa powder

  • 1 teaspoon nutmeg
  • 1 cup granulated sugar
  • 2 eggs room temperature
  • ½ cup sunflower oil or any neutral oil
  • 1 teaspoon vanilla extract
  • For the Chocolate Glaze:
  • 1 cup dark chocolate chips
  • ½ cup heavy cream

Instructions
 

  • Step 1: Prepare the Cake Batter
  • Preheat oven to 350°F (175°C). Grease and line a 9×13-inch baking pan with parchment paper.
  • In a medium bowl, whisk together flour, cocoa powder, baking soda, cinnamon, cardamom, and nutmeg.
  • In a large mixing bowl, beat the eggs and sugar until light and fluffy.
  • Add the oil, vanilla extract, and kefir, mixing until well combined.
  • Gradually fold in the dry ingredients until just incorporated—do not overmix.
  • Step 2: Bake the Cake
  • Pour the batter into the prepared pan, smoothing the top evenly.
  • Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cake cool completely in the pan before adding the glaze.
  • Step 3: Make the Chocolate Glaze
  • Heat the heavy cream in a small saucepan until it just begins to simmer.
  • Remove from heat and pour over the chocolate chips in a bowl. Let sit for 2 minutes, then stir until smooth.
  • Pour the glaze over the cooled cake, spreading it evenly with an offset spatula.
