Ingredients

  • 4 boneless skinless chicken breasts (about 6 oz each)
  • 2 lemons juiced
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • In a large bowl, whisk together lemon juice, olive oil, garlic, rosemary, thyme, salt, and pepper to create the marinade.
  • Add the chicken breasts to the bowl, ensuring they are fully coated in the marinade. Cover and refrigerate for at least 30 minutes or up to 2 hours for maximum flavor.
  • Preheat the grill to medium-high heat.
  • Remove chicken from the marinade and discard the excess.
  • Grill the chicken for 6-8 minutes per side, or until the internal temperature reaches 165°F and the juices run clear.
  • Remove from the grill and let the chicken rest for 5 minutes before serving.
  • Serve with a side of grilled vegetables or a light salad for a complete, low-point meal.

Notes

For added flavor, marinate the chicken overnight.
You can use dried herbs if fresh ones are not available; reduce the quantity by half.
Pair with cauliflower rice or zoodles to keep the dish low in carbs.
