Ingredients
  

  • For the Pudding:
  • 10 Medjool dates seeds removed
  • 1 cup hot water
  • 1 cup all-purpose flour
  • ¾ cup dark brown sugar
  • 4 tablespoons salted butter
  • 1 large egg
  • 2 teaspoons vanilla extract
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon kosher salt
  • For the Toffee Sauce:
  • ½ cup salted butter
  • 1 cup brown sugar
  • ¾ cup heavy cream
  • 1 teaspoon vanilla extract

Instructions
 

  • Prepare the Dates:
  • Soak the Medjool dates in 1 cup of hot water for 10 minutes. Mash lightly to break them down.
  • Make the Batter:
  • Preheat your oven to 350°F (175°C).
  • In a bowl, cream the salted butter and brown sugar until light and fluffy.
  • Add the egg and vanilla extract, mixing until smooth.
  • Sift together the flour, baking soda, baking powder, and salt. Gradually add to the wet mixture.
  • Fold in the soaked dates, including any liquid. Mix until combined.
  • Bake:
  • Grease individual muffin tins or ramekins (2.5-inch diameter).
  • Divide the batter evenly among the tins.
  • Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
  • Make the Toffee Sauce:
  • In a saucepan over medium heat, melt the butter.
  • Add the brown sugar, heavy cream, and vanilla extract.
  • Stir continuously until the sauce thickens, about 8-10 minutes.
  • Assemble and Serve:
  • Poke small holes in the top of each pudding and pour some of the toffee sauce over them to soak in.
  • Serve warm with additional toffee sauce and a scoop of vanilla ice cream or whipped cream.

Notes

Use Medjool dates for the best texture and flavor.
For extra richness, serve with a sprinkle of chopped pecans or walnuts.
Leftovers can be stored in the fridge for up to 3 days or frozen for up to 3 months. Reheat before serving.
