Ingredients
  

  • Chocolate Shell:
  • 300 g high-quality dark or milk couverture chocolate chopped
  • Filling:
  • 1 cup sweetened condensed milk or sweetened condensed coconut milk for a dairy-free option
  • ½ cup crushed pistachios toasted for extra flavor
  • 4 –5 saffron strands optional
  • 1 tsp rose water optional
  • Toppings Optional:
  • Edible rose petals
  • Edible gold leaf
  • Additional crushed pistachios

Instructions
 

  • Prepare the Chocolate Shell:
  • Melt the chopped chocolate using a double boiler (or microwave in 20-second intervals, stirring between each).
  • Optionally, temper the chocolate by cooling it to 86°F–90°F for a glossy, professional finish.
  • Pour the melted chocolate into silicone or polycarbonate molds, ensuring the cavities are evenly coated.
  • Tap the molds gently to release air bubbles, then pour out excess chocolate to create a thin shell.
  • Refrigerate the molds for 10 minutes to set the shell.
  • Make the Filling:
  • In a mixing bowl, combine the sweetened condensed milk with crushed pistachios.
  • For added flavor, stir in saffron strands and rose water.
  • Allow the filling to cool until thick but spreadable.
  • Assemble the Bars:
  • Spoon or pipe the filling into each mold cavity, leaving space for the top layer of chocolate.
  • Pour the remaining melted chocolate over the filling to seal the bars.
  • Smooth the top with an offset spatula and tap the molds again to remove air bubbles.
  • Refrigerate for 30–60 minutes until the chocolate is fully set.
  • Unmold and Decorate:
  • Gently release the bars from the molds.
  • Garnish with crushed pistachios, edible rose petals, and/or edible gold leaf as desired.
  • Serve and Enjoy:
  • Allow the bars to sit at room temperature for 10–15 minutes before serving for the best flavor and texture.

Notes

For extra crunch, try replacing pistachios with toasted almonds or hazelnuts.
Store the bars in an airtight container in a cool, dry place for up to 5 days, or freeze for up to 3 months.
To restore the perfect texture after refrigeration, let the bars sit at room temperature for about 30 minutes before serving.
